Easy Fried Rice on the Barbecue Flat Top

Using leftover rice from the night before, high heat and a few simple techniques, you'll be making restaurant-quality fried rice at home every time.
We partnered with Coyote Outdoor cooking influencer Tim Clowers to bring this crowd favourite to your backyard. Tim knows a thing or two about feeding a hungry crowd. When his boys were teenagers, he always needed to cook plenty to keep everyone satisfied. Add a house full of mates, and suddenly he was cooking a full-on feast. More often than not, that feast included his Easy Fried Rice, generously topped with Yum Yum sauce, and sometimes it even turned into a complete Steak and Prawn Hibachi spread. To this day, his boys still ask for this recipe because it brings back so many great memories.
What Is Fried Rice?
Fried rice is a classic dish that originated in China. It combines cooked rice with eggs, vegetables and often meat or seafood, all stir-fried over high heat. Traditionally cooked in a wok, this version is made on a Coyote flat top barbecue, making it perfect for outdoor entertaining and bringing everyone together around the cooking surface.

Tim's Easy Fried Rice
Equipment

Coyote Flat Top Barbecue
Ingredients

8 cups cooked white rice (day-old is best)

2 eggs
-
3 tbsp butter
-
½ brown or white onion, diced

4 garlic cloves, minced
-
1 cup frozen peas and carrots

Avocado oil
-
Salt and freshly ground black pepper

Sesame seeds
-
1½ tsp sesame oil
-
4 tbsp smoked soy sauce

3 spring onions, sliced
Method
1. Prepare the Ingredients
Dice the onion and spring onions, and finely mince the garlic.
2. Cook the Onion
Preheat your Coyote flat top barbecue to medium heat. Add a drizzle of avocado oil and cook the onion on one side of the cooking surface until soft and lightly golden.
3. Crisp the Rice
Break up the cold, day-old rice with your hands. Add a little more avocado oil to the flat top and spread the rice into a thin, even layer. Leave it undisturbed until a light golden crust forms, then turn and crisp the other side.
4. Add the Vegetables
Mix the onion and rice together. Cook the peas and carrots on one side of the flat top with a splash of avocado oil until heated through, then fold them into the rice.
5. Cook the Eggs
Scramble the eggs separately on a clean section of the cooking surface. Break them into bite-sized pieces and stir them through the rice.
6. Add the Garlic
Quickly sauté the garlic with a small drizzle of oil for around 60 seconds, just until fragrant. Be careful not to let it burn, then mix it through the rice.
7. Finish the Fried Rice
Add the butter and toss until melted. Drizzle over the smoked soy sauce and sesame oil, then mix everything together until evenly coated.
8. Garnish and Serve
Finish with sesame seeds and sliced spring onions. Serve immediately while hot.
