8–10 lamb chops (approximately 700–900 g)

2 tbsp olive oil

2 tbsp thick yoghurt (or Greek yoghurt)

4 garlic cloves, minced

1 tbsp fresh ginger, grated

1–1½ tsp kosher salt

1 tsp freshly ground black pepper

1 tsp paprika or Kashmiri chilli powder

1 tsp ground cumin

1 tsp garam masala (optional)

1 tbsp lemon juice
-
1 tbsp chopped rosemary or coriander (optional)

Method
1. Marinate the Lamb
Pat the lamb chops dry with paper towel. In a bowl, whisk together the olive oil, yoghurt, garlic, ginger, salt, pepper, spices and lemon juice. Coat the chops evenly, cover and marinate for at least 30 minutes. For the best flavour, refrigerate for 4–8 hours.
2. Prepare the Barbecue
Preheat your Coyote barbecue to high heat (230–260°C) for 10–15 minutes. Clean the cooking grates thoroughly and lightly oil them. If you're using thicker chops, create a two-zone cooking setup by leaving one burner on low. This allows you to sear over direct heat before finishing more gently.
3. Grill the Lamb
Place the lamb chops over direct high heat. Close the hood and cook for approximately 3–4 minutes per side for medium-rare, adjusting the cooking time depending on thickness. Aim for an internal temperature of around 54–63°C.
4. Rest and Serve
Remove the lamb from the barbecue and allow it to rest for 5 minutes before serving. This helps retain all those delicious juices. Finish with a squeeze of fresh lemon juice and a sprinkle of flaky sea salt.
5. Finish with a Festive Touch
Serve alongside mint chutney, grilled vegetables or warm naan. Scatter over pomegranate arils and fresh herbs for a vibrant presentation that's perfect for festive entertaining.
