Grilled Prawn Skewers

Coyote SL-Series Barbecue
Ingredients

450 g medium prawns, peeled and deveined

Fresh flat-leaf parsley, chopped

2 tbsp extra virgin olive oil

Salt and freshly cracked black pepper

Juice of 1 fresh lemon

Wooden or metal skewers (if using wooden skewers, soak in water for 20 minutes)
Method

Thread 4–5 prawns onto each skewer.

Drizzle with olive oil and lemon juice.

Season with salt, pepper and chopped parsley.

Grill over medium-high heat for 2–3 minutes per side, until the prawns turn pink and develop a light char.

Serve immediately with fresh lemon wedges.
Whipped Ricotta Crostini

Coyote SL-Series Barbecue
Ingredients

1 French baguette, sliced into 1 cm pieces

250 g full-cream ricotta
-
1 tbsp extra virgin olive oil (plus extra for drizzling)
-
Juice of 1 lemon
-
1 cup cherry tomatoes
-
Salt, to taste
-
Fresh parsley, finely chopped
Method
Prepare the Ricotta
Combine the ricotta, lemon juice, olive oil and a pinch of salt in a bowl. Whip until smooth and creamy.
Grill the Bread and Tomatoes
Brush both sides of the baguette slices with olive oil and lightly season with salt.
Toss the cherry tomatoes with a drizzle of olive oil.
Grill the bread for 1–2 minutes per side until lightly toasted.
Grill the tomatoes for 3–4 minutes until blistered and softened.
Assemble
Spread the whipped ricotta onto each crostini, top with the grilled tomatoes and finish with freshly chopped parsley.
Melissa's Secret Sangria
Ingredients

1 bottle of your favourite red wine (Melissa uses Cabernet Sauvignon)

250 ml orange liqueur
-
125 ml brandy
-
750 ml to 1 litre ginger ale

½ apple, thinly sliced
-
2–3 orange slices
-
Ice
Method

Combine the wine, orange liqueur, brandy and ginger ale in a large jug.

Add the sliced apple and oranges.

Fill serving glasses with ice and pour over the sangria.

Serve chilled.
